Papaya Glazed Pork~Corn Cob Wheels~Papaya Tartare

Ingredients
 
3/4 lb small boneless Pork Loin
1/4 t Himalayan Salt, divided
3 T agave nectar grapeseed oil
2 T fresh ginger (or 1 slice 1" x 1/4")
1/2 of medium papaya, 1/4 pureed, 1/4 diced
1 t balsamic vinegar
Fresh Parsely, chopped

Method

Preheat oven to 400 degrees.
Mix together 1/8 tsp salt, agave, grapeseed oil, ginger, papaya & vinegar.
Using a brush, paint the glaze on both sides of loin, reserve what's left.
Place loin in shallow baking dish and place in oven.
Bake for 15 minutes.
While loin is cooking prepare the corn. Cut into coins that are 2 kernels wide. Drizzle with oil & sprinkle balance of salt.
Place in pan with loin. Turn loin over and bake another 7 minutes.
Remove corn.
Broil loin until golden. Remove from oven and lest rest (5 minutes).
Cut loin into - 4" long, 2" wide, 2" thick medallions.

Plating

Fan out several pork medallions.
Place 3 cob coins on plate.
Spoon diced papaya (tartare) onto plate, drizzle with glaze & oil.
Sprinkle parsely over entire dish. Serve and enjoy!
