Coffee for Dessert Lovers

Coffee Pot De Creme

Makes about 12 small cups

Ingredients

4 egg yolks

3 whole eggs

5 oz sugar

1 qt of half & half

½ of a vanilla bean or ½ tsp vanilla extract.

*Coffee flavor (1 tsp instant coffee mixed with 1tsp water)

Method

Preheat oven to 350f

Whisk the egg yolks,whole eggs, sugar and coffee flavor until combined. Heat the half & half with the vanilla bean, if used. Add the warm half & half to the egg mixture. Add vanilla extract if used. Strain the mix and fill baking cups. Cover the top of the water bath with foil and bake in water bath for 30 min.

Coffee Sauce

1 cup milk

4 egg yolks

3 oz sugar

*Coffee flavor

Method

Mix all the ingredients together in a bowel. Cook the over a double boiler. Make a good thick sauce without overcooking the mix. Cook the mix to about 185f.

Coffee Almond Brittle

7 oz butter

6 oz sugar

2 oz honey

8 3/4 oz almonds

*Coffee flavor

Method

Preheat oven to 380f

Mix all the ingredients together except for the almonds. Place in a saucepan and bring to a boil for for 2 minutes. Add almonds and remove from heat. On a baking pan lined with baking paper, spoon out a tablespoon of mix and bake for 8 to 10 minutes or until golden brown, checking frequently to make sure that it does not burn. Remove from oven amd allow to cool. After cooling , break the brittle into pieces and put together with the coffee cream.

Coffee Cream

Ingredients

Whipped cream

*Coffee flavor

Method

Mix whipped cream with some sugar and add the coffee flavor to it.

To Plate

There are many variations of plating you can use. Use your imagination and just have fun.
